Description

The present Standard applies to food products and establishes method for determination of Clostridium perfringens. The method is based on selection of C. perfringens from the colonies grown as a result of the product plating, cultivation of inoculum or cultural fluid in selective media (pour-plate method). Determination of the selected colonies as C. perfringens is based on morphological and biochemical properties analysis. Enumeration of C. perfringens in the inoculum and consideration of their presence (absence) depend on standard technical documentation requirements. The purpose of the given method is as follows: - Establishing of conformance of microbiological characteristics of a food product to the requirements of standard technical documentation; - Testing of a product on sanitary and epidemiological grounds; - Analysis of bacterial population (cultural fluid) containing mesophilic anaerobic clostridia if it is required to confirm the presence of C. perfringens in a plating culture. |
