Description
|
This standard applies to food products and establishes method of detection of sulphite-reducing clostridia in the specified batch of a food product and two methods of determination of their quantity: most probable number (MPN) method and the method of sowing into agarized medium. The methods are based on sowing of the specified quantity of a product and (or) its cultivations into iron-sulphite-containing media, incubation of inoculations at (37 1)°C for not over 72 h, confirmation of belonging the grown microorganisms by cultural, morphological and biochemical characters to sulphite-reducing clostridia. The method of determination of quantity of sulphite-reducing clostridia by means of sowing into agarized media is intended for food products containing over 150 sulphite-reducing clostridia in 1 g or over 15 sulphite-reducing clostridia in 1 cm3. The MPN method of determination is intended for food products containing less than 150 sulphite-reducing clostridia in 1 g, but over З sulphite-reducing clostridia in 10 g or less than 15 sulphite-reducing clostridia in 1 cm3, but over З sulphite-reducing clostridia in 100 cm3. The requirements of this standard are obligatory. |
